I did say I had a thing for jaffles at the moment ... I love runny eggs and crispy bacon for breakfast too. Can it be jaffled? Sure, why not? I gave it a go and that creamy egg cheesy filling with crunchy bacon is YUM YUM YUM. It's so simple, can it even be called a recipe? Anyway, here's the recipe!

Ingredients
2-4 small egg yolks
4 slices of crispy fried bacon (or ham if you want a 'healthier' alternative?)
Cheddar cheese
4 slices of bread spread with butter/margarine on 1 side
Cracked pepper
Sauce of choice (BBQ, tomato/ketchup etc)

How to make it
1. Turn on the jaffle maker to heat it up ready. Place a piece of your bread buttered side down on the 2 jaffle sections.
2. Layer it with cripsy fried bacon/ham, cheese, then the egg yolk (1 in the middle or 1 on each triangle section of the jaffle if you can fit it) topped with cracked pepper and/or your sauce of choice. Put on the next layers of bacon/ham and cheese then top it off with the remaining bread, buttered side facing out. This layering helps to keep the egg enclosed and stops the bread from getting soggy.
3. Close it up carefully so the egg doesn't squirt out ... well too much, and wait until it is nicely browned and toasty on the outside. You'll need to experiment on your jaffle machine how long you need to leave it in for to get the level of egg runniness you LOVE :) Mine was 4 minutes.
