I've been getting into jaffles of late. Simple savoury fillings of ham, cheese, tomato and cracked pepper with that soft gooey cheesy centre and crisp toasty bread shell.
This got me wondering and experimenting with how a sweet version could work. After a couple of trials, I think my CHOCOLATE, BANANA & COCONUT JAFFLE concoction is a winner! It's quick and easy to whip up. Here's my recipe.

Ingredients
1 sliced banana (or you can try strawberries or rasberries)
2-4 squares of premium dark cooking chocolate (or go for milk chocolate if you prefer)
Moist dessicated coconut flakes
2 slices of bread or wraps (aka flat bread, tortilla, chapati)
Butter/margarine if using bread
Vanilla ice cream
Chocolate sauce (I used ice magic to save time)
I tried versions with white bread, multigrain bread and chapati wrap. The multi's healthiness didn't quite go with the rest of it for me personally. I liked the white bread for its soft fluffy cripsy shell and the wrap for its thin cripsy shell. hmm maybe one could be used for the top and the other for the bottom to get the best of both? There's an idea!

How to make it
1. Turn on the jaffle maker to heat it up ready. Place 1 piece of your bread/wrap of choice on it. If you're using bread, lighlty butter the bottom side of it. It'll help crisp it up. Don't do it for the wrap as it gets a bit soggy.
2. Place the banana, chocolate squares, and coconut in the area where the triangle filling area will be enclosed in the jaffle maker. I found using 1 chocolate square on each section was enough, but if you LOVE LOVE your chocolate go ahead with 2 ... or more.
3. Place the other piece of bread/wrap on top. Again if it's bread you're using, butter the top side. Close it up and wait. In my jaffle maker I left it for about 5 mins (past when the machine said it was done) so that it was sure to be nicely browned and crispy on the outside.
4. Once done, cut out the triangle pieces with a sharp knife to get clean edge lines.

How to enjoy it
Serve it with your favourite vanilla ice cream, drizzled with chocolate sauce garnished with some fruit then just DIG IN! My tip though is to pick up the jaffle and bite into it rather than using a spoon as it can get SUPER MESSY with that smooth rich and oozy chocolate centre. hmmmm yum.
